A Different Story
April Fools Day, our birthday, has come and gone. Bethany’s Table turned 17!
For seventeen years, the story we told has been one of survival and incremental growth—the "work in progress". It was a narrative defined by what we lacked: the proper hoods, the right bar, the "trappings" of a destination restaurant. While that story honored our grit, it has become a limitation. It is time to change the story we tell.
We no longer measure ourselves against our own "humble beginnings." Instead, we recognize our place among the independent restaurant compatriots who define the Portland dining scene. These are the survivors, founder-driven restaurants that distinguish themselves by their authenticity, standards, values and relationships.
Similar to these compatriots, Bethany’s Table is not a "concept" or formula; we are an independent entity carried through time by the will and intention of their founders. Standing with the best of them acknowledges that our kitchen and service standards are no longer "aspirational"—they are the realized product of a high-functioning team.
The Eagle Has Landed
The "European-style" label that describe us isn't about a design choice; it is about the lack of a manufactured concept in favor of authentic, willful determination. We have enlarged our family to include a group of professionals who choose to be here because they recognize the caliber of the work. We have graduated. By moving the tassel on our mortarboard from right to left, we stop asking for permission to be considered "top tier". We are claiming our place as a personal refuge and a "Freestyle Bistro" that stands as a refuge, a worthy destination alongside the city's finest.
